Strawberry Hemp Chocolate Truffles

I needed to create an original yummy treat I could be proud of for this weekend’s holiday party. I wanted it to have hemp, be raw, gluten free, sugar free, and vegan. I also wanted it to be delicious and a little fancy. What I created was easy but slightly more tedious than my usual style in the kitchen. However, because they were such a hit at the party, I’m going to say it was worth it.

Strawberry Hemp Chocolate Truffles

For the Chocolate:

1C coconut oil, gently melted

1/2C raw cacao powder

5 medjool dates

For the Filling:

1/2 C cashews, soaked overnight

1/2C water

1 1/2C fresh strawberries

1/2C raw hemp seeds

1/2C coconut oil, gently melted

1/4t salt

3 dates

juice of 1/2 lemon

1/2t vanilla

1) Blend filling ingredients until smooth and set aside.

2) Blend chocolate ingredients until smooth.

3) In small paper cups or chocolate moulds pour in a thin layer of chocolate and put in freezer until hard. (about 5 minutes)

4) Pour a layer of strawberry filling on top of the chocolate and put in freezer until hard.

5) Pour a top layer of chocolate over the strawberry filling and put in freezer until hard.

6) Store in the freezer but serve at room temperature so the strawberry filling will be soft and creamy.

A funny thing happens to me when I take food to parties these days. At least one person usually asks me if what I brought is medicated with cannabis. I will smile and tell them that it is not medicated but it does contain hemp.  Now, when I cook for other people I seem to put hemp in everything so it can start a conversation and more people can know how beneficial and delicious hemp is.
