I got a lot of requests on social media for this recipe after I posted this one simple picture. Happily, I wrote the recipe down.
Imagine chocolate, coffee, and hemp delivered as a fluffy pudding that slides just right on the tongue. A delicious way to get more antioxidants, amino acids, and essential fatty acids for dessert, breakfast, or anytime snack.
Mocha Hemp Pudding Pie
Crust:
1/2C walnuts
1/3C hempseeds
1/4C coconut oil, melted
1/8t salt
1-2T maple syrup
1T cacao powder
Pudding Filling:
2C cashews, soaked overnight
2T coconut oil, gently melted
1/4C raw cacao powder
1/4C espresso
1t vanilla
1/4C hemp seeds
3T maple syrup
- Pulse crust ingredients in a food processor or blender until fully mixed and crumb size. Press into the bottom of a pie pan.
- Blend all filling ingredients until smooth.
- Pour filling ingredients over crust and smooth to the edges with a spatula.
- Chill.
- Serve with chopped walnuts and hempseed sprinkled on top.
The filling is great all by itself too if you ever feel like skipping the crust. Hope you enjoy this one!
